How does vacuum cooling machine work?

The vacuum system evacuates the air in the entire vacuum chamber. This evacuation causes a drop in pressure within the chamber, which causes the product within the chamber to reduce the temperature by "evaporative cooling." "Evaporation cooling" is achieved as the moisture in the product "boils" under reduced pressure in the vacuum chamber.

The vacuum system should be sized to reduce the atmospheric pressure in the vacuum cooler at an acceptable rate.
